Father’s Day is the perfect excuse to fire up the BBQ. If you want to make your spread a little more special for the occasion, try these easy recipes that are guaranteed to put a smile on Dad’s face.
Sticky BBQ Chicken Thighs
Combine barbecue sauce with a little honey, garlic and soy sauce, then brush over the chicken as it cooks until caramelised and golden. Serve with a squeeze of lime and plenty of napkins.
Grilled Corn With Chilli Butter
Take classic corn on the cob to the next level. Grill the corn until lightly charred, then brush with butter mixed with chilli flakes, lime zest and a little salt. It’s an easy side that brings plenty of flavour.
Loaded BBQ Potatoes
Wrap small potatoes in foil and cook them on the BBQ until tender. Pick a starchy or all-rounder variety like Sebago or Kennebec for a fluffy inside and crisp skin. When baked, split them open and pile on grated cheese, crispy bacon, sour cream and spring onion.
Honey-Soy BBQ Prawns
If you’re looking to chuck a few shrimp on the barbie, toss peeled prawns in a quick marinade of soy sauce, honey, garlic and lime juice. Thread onto skewers and cook for just a few minutes until pink and lightly charred.
Grilled Fish Tacos With Mango-Lime Salsa
Start by marinating a firm white fish, such as barramundi, in olive oil, smoked paprika, cumin, chilli powder, crushed garlic and lime juice. Season with salt and pepper and set aside for 10–15 minutes. For the salsa, combine one diced mango with finely diced red onion, cucumber, fresh coriander, lime juice and sliced chilli. Lightly oil the grill and cook the fish for around 3–5 minutes on each side, depending on thickness, until cooked through and flaky. Warm small flour or corn tortillas on the BBQ, then fill with shredded cabbage, pieces of grilled fish, mango-lime salsa and a dollop of sour cream or natural yoghurt. Finish with a squeeze of fresh lime and serve immediately.
Grilled Banana Boats
For a dessert that requires almost no effort, slice a banana lengthways without cutting all the way through, stuff with a few squares of chocolate and wrap in foil. Place on the BBQ until the chocolate melts and the banana is soft. Open carefully and serve with a scoop of vanilla ice cream.
